“ 1 pound hormone & antibiotic-free ground beef
1/2 medium-sized onion, diced*
1 clove garlic, diced
1 carrot, scrubbed (not peeled) and diced
1 yellow squash, diced
2 small zucchini, diced
1/2 of a 28 oz can of organic diced tomatoes (using the other half in another recipe)
2 Tablespoons tomato paste
A small pinch each of dried parsley, oregano and basil
1/2 cup dry pastina In a medium sized heavy saucepan over medium heat brown the ground beef with the onions and garlic. When beef is halfway browned, add the carrots. Once browned, turn to low and cook with the lid on for about ten minutes to make sure that the carrots get soft. Then add the squash, tomatoes, tomato paste and pastina, stirring to mix. Add water to cover, plus about 1/2 inch (it will get soaked up by the pastina), cover, and cook over low heat, stirring occassionally, for 30 minutes. Serve as is or puree (I use my stick blender directly in the pot and it works great for a level 3 eater) to a consistency appropriate for your child. Store in the refrigerator for up to four days, or freeze in batches or an ice cube tray.
