“ 1 pound hormone & antibiotic-free ground beef
1/2 medium-sized onion, diced*
1 clove garlic, diced
2 carrots, scrubbed (not peeled) and diced
2 medium-sized russet potatoes, peeled and diced
1/2 cup frozen peas
2/3 cup frozen green beans, cut into small pieces
1/2 of a 28 oz can of organic diced tomatoes (using the other half in another recipe)
1 Tablespoon tomato paste
A small pinch of dried parsley
One small bay leaf In a medium sized heavy saucepan over medium heat brown the ground beef with the onions and garlic. When beef is halfway browned, add the carrots. Once browned, add all other ingredients and enough water to cover. Cook, over low heat, stirring occassionally for 30 minutes until all vegetables are soft.
